To add to this, can we specifically have an option to show or not show the itemization on the customer receipt? We've had multiple merchants complain about the amount of wasted paper. I know we can print 2 merchant copies instead but it would be nice to have it display the correct merchant/customer copy at the bottom.

Absolutly , proposed by Sam . There's too much info in current format . Total pay by cash ( not necessary since it matches total ) only Pay CC is relevant .
